So as you can see today we are going to try food from Pakistan!

And from a city called Peshawar:

And it is the recipe by one of my Pakistani friends named Syeda Tayyaba.

The first ingredient is obviously mutton.

We use one kilogram of mutton, cut into small pieces.

And she mentioned 7 green chilies or according to your spice level.

But since this green chili is super, super spicy, I used 4 here.

Then 4 to 5 tomatoes, chopped into quarters.

Heat three tablespoons of ghee.

I also added 2 little cubes of butter.

You can increase or decrease the amount if you want.

When it's melted we add the garlic and ginger.

And fry for a while.

Then we add the mutton.

Now we fry the mutton well and keep stirring.

When the meat turns light brown cover with the lid.

Cook for 30 to 40 minutes on low heat.

No need to add water - the mutton will cook in the steam.

Keep checking around the last 10 minutes for doneness.

Here the meat seems pretty done.

So now we add the tomatoes.

And half of the chopped chilies.

Stir well.

Cook again for additional 10 to 15 minutes over low heat.

In the meantime we make raita.

For that I cut up some cucumbers.

You can also cut them smaller if you want.

And add some yogurt.

I have used greek yogurt here, you can use any yogurt you like.

Then we add some cumin.

Now we uncover and check if the tomato is melted.

And we take out the skin from the tomatoes with a fork like this.

At this point we fry the mutton and tomatoes over medium high heat for 15 to 20 minutes.

Now we freshly crush two teaspoons of black pepper.

At this point we cover and cook for 5 minutes on low heat.
